If you’ve ever baked before you probably already have a cupcake pan, but if you need to turn out more than three dozen to fill your cupcake stand it is extremely handy to have a second pan. Having a second cupcake pan allows you to either bake twice as much at a time, or be preparing the next batch while the first one is in the oven. I like to do the latter of those two options because my oven heats at very different rates on the top and bottom racks.
Also, it’s important to check the pan that you already have. Most of them have some sort of nonstick coating on them so they can release muffins easily, but once the nonstick is scratched it can become toxic. If you have nonstick stuff that’s been scratched, it’s a good idea to swap it out. To prevent that from happening, never use metal utensils against nonstick!
